this is how you fry

FIRST MATE’S FRYING INSTRUCTIONS

Preheat the oil to 170 °C.

 

Fry the chips in small quantities until golden

yellow (approx. 6 minutes from frozen).

 

While frying, ensure that the oil temperature

stays between 160 °C and 170 °C.

 

Regularly skim the oil in the fryer to remove any buildup of brown or black specs.

 

Keep your frying oil in ship-shape and change it after about 10 uses.

 

Do not overcook or serve overcooked products.
